Here is a simple recipe to make Veg Kofta Curry:
Ingredients:
- For Kofta:
- 1 cup grated paneer
- 1 cup boiled and mashed potatoes
- 1/2 cup grated carrots
- 1/2 cup chopped green beans
- 2 tablespoons cornflour
- Salt and pepper, to taste
- For Curry:
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- 1 teaspoon ginger garlic paste
- 1 large onion, chopped
- 2 large tomatoes, chopped
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon cumin powder
- 1 teaspoon red chilli powder
- Salt and sugar, to taste
- 2 tablespoons cream
- Fresh coriander, for garnish
Instructions:
- To make the koftas, mix all the ingredients for the kofta in a bowl. Divide the mixture into equal-sized balls.
- Heat oil in a deep pan and shallow fry the kofta balls until golden brown. Remove and drain on paper towels.
- In the same pan, add cumin seeds and let it crackle. Add ginger garlic paste and cook for a minute.
- Add chopped onion and cook until it turns golden brown. Add chopped tomatoes and cook until soft.
- Add turmeric powder, coriander powder, cumin powder, red chilli powder and salt. Cook for 2-3 minutes.
- Add 2 cups of water and let it come to a boil. Add sugar and let the sauce simmer for 5 minutes.
- Add the fried koftas and let it simmer for another 5 minutes.
- Finally, add cream and stir well.
- Serve hot with rice or roti, garnished with fresh coriander.
