Here is a simple recipe to make Veg Kofta Curry:

Ingredients:

  • For Kofta:
  • 1 cup grated paneer
  • 1 cup boiled and mashed potatoes
  • 1/2 cup grated carrots
  • 1/2 cup chopped green beans
  • 2 tablespoons cornflour
  • Salt and pepper, to taste
  • For Curry:
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon ginger garlic paste
  • 1 large onion, chopped
  • 2 large tomatoes, chopped
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon red chilli powder
  • Salt and sugar, to taste
  • 2 tablespoons cream
  • Fresh coriander, for garnish

Instructions:

  1. To make the koftas, mix all the ingredients for the kofta in a bowl. Divide the mixture into equal-sized balls.
  2. Heat oil in a deep pan and shallow fry the kofta balls until golden brown. Remove and drain on paper towels.
  3. In the same pan, add cumin seeds and let it crackle. Add ginger garlic paste and cook for a minute.
  4. Add chopped onion and cook until it turns golden brown. Add chopped tomatoes and cook until soft.
  5. Add turmeric powder, coriander powder, cumin powder, red chilli powder and salt. Cook for 2-3 minutes.
  6. Add 2 cups of water and let it come to a boil. Add sugar and let the sauce simmer for 5 minutes.
  7. Add the fried koftas and let it simmer for another 5 minutes.
  8. Finally, add cream and stir well.
  9. Serve hot with rice or roti, garnished with fresh coriander.
