Sambar Recipe:

Ingredients:

  • 1 cup toor dal (split pigeon peas)
  • 1 large onion, chopped
  • 2 medium-sized tomatoes, chopped
  • 1 cup mixed vegetables (such as eggplant, drumstick, carrots, and pumpkin)
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1 tsp urad dal (split black lentils)
  • 1 tsp chana dal (split chickpeas)
  • 1 dried red chili
  • 2 green chilies, chopped
  • 1 tsp turmeric powder
  • 1 tsp sambar powder
  • Salt to taste
  • 2 tbsp tamarind juice
  • 2 tbsp oil
  • Fresh coriander leaves for garnish

Instructions:

  1. Rinse and soak the toor dal in water for about 30 minutes.
  2. In a large pot, heat the oil and add the mustard seeds. When they begin to pop, add the cumin seeds, urad dal, chana dal, and dried red chili.
  3. Add the chopped onion and green chilies, and sauté until the onions are translucent.
  4. Add the chopped tomatoes and cook until they are soft.
  5. Add the mixed vegetables, turmeric powder, sambar powder, and salt to taste. Stir well to combine.
  6. Add the drained toor dal to the pot and enough water to cover the ingredients.
  7. Bring the mixture to a boil, reduce heat, and let it simmer for 15-20 minutes or until the dal is cooked and the vegetables are tender.
  8. Stir in the tamarind juice and cook for another 5 minutes.
  9. Serve hot, garnished with fresh coriander leaves.
