Sambar Recipe:
Ingredients:
- 1 cup toor dal (split pigeon peas)
- 1 large onion, chopped
- 2 medium-sized tomatoes, chopped
- 1 cup mixed vegetables (such as eggplant, drumstick, carrots, and pumpkin)
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 tsp urad dal (split black lentils)
- 1 tsp chana dal (split chickpeas)
- 1 dried red chili
- 2 green chilies, chopped
- 1 tsp turmeric powder
- 1 tsp sambar powder
- Salt to taste
- 2 tbsp tamarind juice
- 2 tbsp oil
- Fresh coriander leaves for garnish
Instructions:
- Rinse and soak the toor dal in water for about 30 minutes.
- In a large pot, heat the oil and add the mustard seeds. When they begin to pop, add the cumin seeds, urad dal, chana dal, and dried red chili.
- Add the chopped onion and green chilies, and sauté until the onions are translucent.
- Add the chopped tomatoes and cook until they are soft.
- Add the mixed vegetables, turmeric powder, sambar powder, and salt to taste. Stir well to combine.
- Add the drained toor dal to the pot and enough water to cover the ingredients.
- Bring the mixture to a boil, reduce heat, and let it simmer for 15-20 minutes or until the dal is cooked and the vegetables are tender.
- Stir in the tamarind juice and cook for another 5 minutes.
- Serve hot, garnished with fresh coriander leaves.
