Chicken Sweetcorn Soup Recipe:
Ingredients:
- 1 lb boneless chicken breast, diced
- 4 cups chicken broth
- 1 can sweetcorn kernels
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tbsp ginger, grated
- 1 tbsp cornstarch
- 2 tbsp all-purpose flour
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh cilantro for garnish
Instructions:
- Heat the olive oil in a large pot over medium heat.
- Add the onion, garlic, and ginger, and cook until the onion is soft and translucent.
- Add the diced chicken and cook until browned.
- In a small bowl, whisk together the cornstarch, flour, and 2 tbsp of water.
- Pour the mixture into the pot and stir until combined.
- Pour in the chicken broth and add the sweetcorn kernels.
- Bring to a boil, reduce heat and let simmer for 10 minutes.
- Season with salt and pepper to taste.
- Serve hot and garnish with cilantro. Enjoy!
