Egg Curry Recipe:
Ingredients:
- 4 boiled eggs, shelled and sliced
- 1 large onion, chopped
- 2 tomatoes, chopped
- 2 garlic cloves, minced
- 1 inch ginger, minced
- 2 green chillies, chopped
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1 tsp turmeric powder
- 1 tsp red chilli powder
- 1 tsp garam masala
- Salt to taste
- 2 tbsp oil
- Coriander leaves for garnish
Instructions:
- Heat oil in a large pan on medium heat.
- Add cumin seeds and wait until they start to crackle.
- Add chopped onions, minced ginger and garlic. Cook until the onions are golden brown.
- Add chopped tomatoes, green chillies and cook until the tomatoes are mushy.
- Add coriander powder, turmeric powder, red chilli powder and garam masala. Cook for a minute.
- Add 1 cup of water and let the mixture simmer for 5 minutes.
- Add the sliced boiled eggs to the mixture and cook for 2-3 minutes.
- Season with salt to taste.
- Serve hot garnished with coriander leaves. Enjoy!
