Egg Curry Recipe:

Ingredients:

  • 4 boiled eggs, shelled and sliced
  • 1 large onion, chopped
  • 2 tomatoes, chopped
  • 2 garlic cloves, minced
  • 1 inch ginger, minced
  • 2 green chillies, chopped
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1 tsp turmeric powder
  • 1 tsp red chilli powder
  • 1 tsp garam masala
  • Salt to taste
  • 2 tbsp oil
  • Coriander leaves for garnish

Instructions:

  1. Heat oil in a large pan on medium heat.
  2. Add cumin seeds and wait until they start to crackle.
  3. Add chopped onions, minced ginger and garlic. Cook until the onions are golden brown.
  4. Add chopped tomatoes, green chillies and cook until the tomatoes are mushy.
  5. Add coriander powder, turmeric powder, red chilli powder and garam masala. Cook for a minute.
  6. Add 1 cup of water and let the mixture simmer for 5 minutes.
  7. Add the sliced boiled eggs to the mixture and cook for 2-3 minutes.
  8. Season with salt to taste.
  9. Serve hot garnished with coriander leaves. Enjoy!
