Pani Puri Recipe:
Ingredients: For the puri:
- 1 cup all-purpose flour
- 1/4 cup semolina flour
- 1/4 teaspoon salt
- 1/2 teaspoon carom seeds (ajwain)
- 2 tablespoons oil
- Water as needed
For the filling:
- 1 cup boiled and mashed potatoes
- 1/2 cup boiled and mashed chickpeas
- 1/4 cup chopped onion
- 1/4 cup chopped tomatoes
- 1/4 cup chopped cilantro
- Salt to taste
- Red chili powder to taste
- Chat masala to taste
For the pani:
- 2 cups mint and coriander chutney
- 2 cups water
- Salt to taste
- Black salt to taste
- Roasted cumin powder to taste
- Red chili powder to taste
Instructions:
- In a large mixing bowl, combine the all-purpose flour, semolina flour, salt, carom seeds, and oil. Add enough water to form a soft dough. Cover and let rest for 30 minutes.
- Divide the dough into small balls. Roll out each ball into thin circles, about 2 inches in diameter.
- Heat oil in a deep saucepan for frying. When the oil is hot, gently drop in the puri one by one. Fry until puffed and golden brown, about 2 minutes. Remove from the oil and drain on paper towels.
- In a large mixing bowl, combine the boiled potatoes, boiled chickpeas, chopped onion, chopped tomatoes, chopped cilantro, salt, red chili powder, and chat masala. Mix well to combine.
- In another mixing bowl, whisk together the mint and coriander chutney, water, salt, black salt, roasted cumin powder, and red chili powder.
- To assemble the pani puri, take a puri and make a small hole in the center with your thumb. Fill with a spoonful of the potato-chickpea filling. Dip in the pani and eat immediately. Repeat with the remaining puris and filling. Enjoy!
