Pani Puri Recipe:

Ingredients: For the puri:

  • 1 cup all-purpose flour
  • 1/4 cup semolina flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon carom seeds (ajwain)
  • 2 tablespoons oil
  • Water as needed

For the filling:

  • 1 cup boiled and mashed potatoes
  • 1/2 cup boiled and mashed chickpeas
  • 1/4 cup chopped onion
  • 1/4 cup chopped tomatoes
  • 1/4 cup chopped cilantro
  • Salt to taste
  • Red chili powder to taste
  • Chat masala to taste

For the pani:

  • 2 cups mint and coriander chutney
  • 2 cups water
  • Salt to taste
  • Black salt to taste
  • Roasted cumin powder to taste
  • Red chili powder to taste

Instructions:

  1. In a large mixing bowl, combine the all-purpose flour, semolina flour, salt, carom seeds, and oil. Add enough water to form a soft dough. Cover and let rest for 30 minutes.
  2. Divide the dough into small balls. Roll out each ball into thin circles, about 2 inches in diameter.
  3. Heat oil in a deep saucepan for frying. When the oil is hot, gently drop in the puri one by one. Fry until puffed and golden brown, about 2 minutes. Remove from the oil and drain on paper towels.
  4. In a large mixing bowl, combine the boiled potatoes, boiled chickpeas, chopped onion, chopped tomatoes, chopped cilantro, salt, red chili powder, and chat masala. Mix well to combine.
  5. In another mixing bowl, whisk together the mint and coriander chutney, water, salt, black salt, roasted cumin powder, and red chili powder.
  6. To assemble the pani puri, take a puri and make a small hole in the center with your thumb. Fill with a spoonful of the potato-chickpea filling. Dip in the pani and eat immediately. Repeat with the remaining puris and filling. Enjoy!
