Curd Rice Recipe:

Ingredients:

  • 2 cups cooked rice
  • 2 cups plain yogurt
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon urad dal (split black lentils)
  • 1/2 teaspoon chana dal (split chickpeas)
  • 1 dried red chili
  • 10 curry leaves
  • 2 tablespoons oil
  • Salt to taste

Instructions:

  1. In a large mixing bowl, whisk together the cooked rice and yogurt until well combined. Set aside.
  2. In a large saucepan, heat the oil over medium heat. Add the mustard seeds, cumin seeds, urad dal, chana dal, dried red chili, and curry leaves. Cook until the seeds start to pop and the lentils turn golden brown.
  3. Pour the tempering mixture into the bowl with the rice and yogurt. Stir well to combine. Season with salt to taste.
  4. Serve the curd rice chilled, topped with chopped cilantro, sliced cucumber, and pomegranate seeds. Enjoy!
