Idli Recipe:

Ingredients:

  • 2 cups idli rice
  • 1 cup urad dal (split black lentils)
  • Salt to taste
  • Water as needed

Instructions:

  1. Rinse the rice and urad dal separately and soak in water for at least 6-8 hours or overnight.
  2. Drain the rice and urad dal and grind them separately in a blender or food processor. The batter for the rice should be smooth and fluffy, while the batter for the urad dal should be slightly coarser.
  3. Mix the two batters together and add salt to taste. The batter should be light and fluffy.
  4. Cover the batter and let it ferment for 8-10 hours or overnight in a warm place.
  5. Grease the idli molds with oil and fill them with the batter.
  6. Place the molds in a steamer and steam the idlis for 10-12 minutes or until they are cooked through and fluffy.
  7. Serve the idlis hot with chutney and sambar.
