 Lemon Rice Recipe:

Ingredients:

  • 1 cup basmati rice
  • 2 tablespoons ghee or oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon urad dal
  • 1 teaspoon chana dal
  • 1 teaspoon cumin seeds
  • 2 dried red chili peppers
  • 8-10 curry leaves
  • 1 medium onion, sliced
  • 1 green chili pepper, chopped
  • 2 tablespoons freshly squeezed lemon juice
  • Salt to taste
  • 2 tablespoons chopped fresh cilantro for garnish

Instructions:

  1. Wash the rice in plenty of water and drain. Cook the rice according to package instructions and keep it warm.
  2. In a large pan, heat the ghee or oil over medium heat. Add the mustard seeds, urad dal, chana dal, cumin seeds, dried red chili peppers, and curry leaves and fry until the seeds begin to pop and the lentils turn golden brown.
  3. Add the onion and green chili pepper and cook until the onion is soft and translucent, about 5 minutes.
  4. Stir in the cooked rice, lemon juice, and salt to taste. Mix well to combine.
  5. Cook for another 2-3 minutes, stirring occasionally, until the lemon juice has been absorbed by the rice.
  6. Serve hot, garnished with cilantro. Enjoy!
